Mirchi pakoras are crispy, spicy fritters made with large green chilies. A perfect companion to tea during the monsoon season!
You’ll need big green chilies, gram flour (besan), ajwain, salt, turmeric, and red chili powder. Add a pinch of baking soda for extra crispiness.
Slit the green chilies lengthwise and remove seeds if you want less heat. You can also stuff them with a bit of mashed potato or paneer.
Mix besan, salt, turmeric, red chili, ajwain, and water into a smooth, thick batter. It should coat the chilies evenly without dripping.
Heat oil in a deep pan and dip each chili in the batter. Fry on medium flame until golden and crispy on all sides.
Serve hot with chutney or ketchup and a cup of masala chai. Enjoy your crunchy, spicy snack while watching the rain!
